What's Mezcal?
Para todo mal, mezcal, y para todo bien también
For everything bad, mescal, and for everything good the same. Since pre-Hispanic times, mezcal, or mescal, has held a respectful place as a fixture in Mexican culinary and social tradition. Mezcal is a distilled spirit made from the fermented heart of the agave, a plant with large, thick, sharply pointed leaves that give the drink it’s Nahuatl name for “cooked pineapple.”
Traditionally, mezcal is handcrafted at small family farms throughout several regions in México. A village usually houses up to several of these production houses, called fábricas orpalenques, with each family using techniques that have been passed down from generation to generation, practiced for over 200 years.
In order to be called a Mezcal, the spirit must come from one of the seven Mezcal producing states in México: Oaxaca, Guerrero, Guanajuato, San Luis Potosí, Zacatecas, Durango and Tamaulipas.
